Spinach Berry Salad

Spinach Berry Salad

This is the best summer salad!
Mix together: Spinach Leaves
Blue cheese crumbles
Sugared pecans and almonds (see below)
A mix of one or more of the following berries:
• Strawberries
• Blueberries
• Blackberries
• Raspberries
(Can also use just Craisins in the winter)
Also good with sliced or chopped grilled Chicken!

Toss with Brianna’s Blush Wine Vinaigrette (Has a strawberry on the label)
Better to use too little rather than too much of the dressing!
Sugar Nuts:
Brown:
• 1/2 cup sliced almonds or a mix of almonds and pecans or pecans
• 4 tsp. sugar
• 1 tsp. water
NOTE: I usually double this because they are so good to just munch on!

Mandarin Orange Salad

This is a great salad to serve when you have company.

Prepare the Dressing
1/2 cup Oil
1/4 cup Vinegar (I used Balsamic Vinegar)
1/4 cup Sugar
2 Tbsp. Parsley
1/2 tsp. Salt
Pepper or Tobasco sauce to taste.

Combine in a jar and shake well.

Brown the Almonds
1/2 cup sliced Almonds
4 tsp. Sugar
1 tsp. Water

Mix in a small fry pan. Over low heat, stir until almonds are browned.
NOTE: You might want to double the almond ingredients because these almonds are so good, you will probably want to eat a couple handfuls before adding them to your salad greens! Good Grief...Just triple it!!!

Prepare the Salad Vegetables1 head Iceberg Lettuce (chop or shred)
1/2 head Romaine Lettuce (chop or shred)
1 1/2 cup Chopped Celery
Chopped Scallions or green onions
16 ox can Mandarin Oranges (drained)

Combine salad vegetables. Add browned almonds. Toss with dressing.

Source: A friend from Temple, TX gave me this recipe about 25 years ago. Loved it then, love it now!

Perfect to serve for company - Can be prepared ahead of time.

Layer in a Wooden Bowl - I use a regular large salad bowl:1 head iceberg lettuce
2 1/2 cup water chestnuts (sliced)
2 1/2 cup cooked chicken, tuna, or shrimp (I just use Deli-Shaved Honey Turkey)

Mix the following and spread over above:1 cup chopped celery
1/2 cup chopped green pepper
1/2 cup minced onion

Spread:1 package frozen peas (uncooked) over all. I used a bag.

Completely cover entire mixture with:1 pint of regular mayonnaise (Do not use Fat Free Mayo)

Sprinkle:3 Tbsp. sugar over mayonnaise.
Cover and refrigerate at least 8 hours before serving.

When ready to serve, spread:
6 oz. grated cheddar cheese
8 slices fried bacon (use real bacon - Do not use bacon bits!)
3 grated or chopped hard boiled eggs.

Do not mix. Serve from bottom of bowl up through salad.
