Jewish Apple Cake
Source: Joan Hay
This is a very moist, delicious cake to make in the fall. YUM!
Not sure why it's called Jewish Apple Cake! :-)
Ingredients3 cups unsifted flour
2 cups sugar
1/2 cup apple sauce
1/2 cup oil
4 eggs
3 tsp. Baking powder
1/2 cup orange juice
Peel and chop: 5 large apples.
Mix together: 2 tsp. Cinnamon, 5 Tbsp. Sugar and 2 Tbsp. flour. Add about ½ cup chopped pecans if desired.
InstructionsBeat first 6 ingredients until smooth. Fold in chopped apples. Pour half of the batter into a greased and floured tube pan. Sprinkle half the cinnamon-sugar mixture on top. Pour the rest of the batter and sprinkle the rest of the cinnamon-sugar mixture on top.
Bake 350 degrees for 1 hour + 45 minutes. (less if using apple sauce...I would definitely check it after 1 hour)
Glaze FrostingMix about 1 cup 10X sugar with 1 tsp. vanilla. Then add some drops of milk until the mixture drips easily from a spoon. Drizzle over the baked cakes.
NOTE: I used one medium and 3 small loaf pans instead of the tube pan. Cooking time will be much shorter. Check after 25 minutes. Text with a toothpick to be sure the batter is set and the apples are cooked.
