Blue Cheese Stuffed Celery
Original Source: Good Housekeeping Magazine. I made some additions to the instructions!
Ingredients2 ounces blue cheese
4 ounces reduced-fat cream cheese softened (regular cream cheese works too!)
2 tablespoons milk
¼ teaspoon pepper (or more if desired)
9 stalks celery hearts,
1 or 2 green onions - chopped fine
1/3 cup chopped walnuts
Snipped chives, for garnish if desired
DirectionsIn medium bowl, with mixer on high speed, beat blue cheese and cream cheese until smooth. Add milk and 1/4 teaspoon freshly ground black pepper and chopped green onion. Beat until well combined. Cover and refrigerate 30 minutes or up to 2 hours.
Transfer cheese mixture to heavy-duty quart-size resealable plastic bag with one corner cut to form 1/2-inch hole. Pipe cheese mixture down centers of celery pieces. Sprinkle with chopped walnuts. Slice celery into one inch bite size pieces.
